Description

Crispy and golden Baked Chicken Taquitos filled with shredded chicken and cheese, perfect for gatherings or a quick weeknight snack.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 8-10 small tortillas
  • Olive oil or cooking spray
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the shredded chicken, cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper in a mixing bowl.
  3. Warm the tortillas in the microwave for about 30 seconds, just until they’re pliable.
  4. Spoon about 2 tablespoons of the chicken mixture onto each tortilla. Roll them up tightly and place them seam-side down on a baking sheet.
  5. Lightly spray the rolled taquitos with olive oil or cooking spray to enhance crispiness.
  6. Bake for 15-20 minutes, or until golden brown and crispy.
  7. Serve with your favorite dips like salsa, guacamole, or sour cream.
