Description
A deliciously cheesy and comforting low-carb alternative to traditional pasta Parmesan, perfect for weeknight dinners.
Ingredients
- 1 large head of cauliflower (cut into florets)
- 2 cups marinara sauce (store-bought or homemade)
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the cauliflower florets with a drizzle of olive oil, oregano, garlic powder, salt, and pepper until well coated.
- Spread the cauliflower evenly on a baking sheet and roast for 20-25 minutes, or until fork-tender and slightly caramelized.
- Remove from the oven and reduce the temperature to 375°F (190°C).
- Layer half of the roasted cauliflower in a 9×13-inch baking dish, pour half of the marinara sauce over it, then sprinkle with half of the mozzarella and Parmesan cheese.
- Add the remaining cauliflower, followed by the rest of the marinara sauce, and top with the remaining cheese.
- Bake for 20-25 minutes, until the cheese is bubbly and golden brown.
- Allow to cool slightly before serving.
Notes
For an even richer flavor, consider adding sautéed onions or roasted red peppers. A sprinkle of Italian-seasoned breadcrumbs can provide a delightful crunch.
