Description

A deliciously cheesy and comforting low-carb alternative to traditional pasta Parmesan, perfect for weeknight dinners.


Ingredients

  • 1 large head of cauliflower (cut into florets)
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cauliflower florets with a drizzle of olive oil, oregano, garlic powder, salt, and pepper until well coated.
  3. Spread the cauliflower evenly on a baking sheet and roast for 20-25 minutes, or until fork-tender and slightly caramelized.
  4. Remove from the oven and reduce the temperature to 375°F (190°C).
  5. Layer half of the roasted cauliflower in a 9×13-inch baking dish, pour half of the marinara sauce over it, then sprinkle with half of the mozzarella and Parmesan cheese.
  6. Add the remaining cauliflower, followed by the rest of the marinara sauce, and top with the remaining cheese.
  7. Bake for 20-25 minutes, until the cheese is bubbly and golden brown.
  8. Allow to cool slightly before serving.

Notes

For an even richer flavor, consider adding sautéed onions or roasted red peppers. A sprinkle of Italian-seasoned breadcrumbs can provide a delightful crunch.
