Description
A warm, sticky casserole dish of baked beans with bacon, perfect for barbecues and potlucks.
Ingredients
- 2 (15–16 oz) cans baked beans
- 1/2 cup packed brown sugar
- 4 slices bacon, chopped
- 1/2 cup bell peppers, diced
- 1/2 cup onions, diced
- Optional: 1–2 tsp Worcestershire sauce or 1 tsp Dijon mustard
Instructions
- Preheat the oven to 350°F (175°C).
- Place a large skillet over medium heat, add chopped bacon, and cook until mostly rendered and beginning to crisp, 5–8 minutes.
- Transfer most of the bacon to a bowl, leaving the rendered fat in the pan.
- Add diced onions and bell peppers to the hot bacon fat and sauté until softened, about 4–5 minutes.
- Reduce heat to low and stir in the brown sugar until it dissolves.
- Pour in the canned baked beans and fold gently to combine; warm for 1–2 minutes.
- Transfer the bean mixture to a baking dish and scatter the cooked bacon evenly over the top.
- Bake uncovered for 30–40 minutes, until bubbling and caramelized; broil for 1–2 minutes if desired.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
For a vegetarian version, swap bacon for smoked tempeh or use smoked paprika with olive oil.
