Description

A warm, sticky casserole dish of baked beans with bacon, perfect for barbecues and potlucks.


Ingredients

  • 2 (15–16 oz) cans baked beans
  • 1/2 cup packed brown sugar
  • 4 slices bacon, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup onions, diced
  • Optional: 1–2 tsp Worcestershire sauce or 1 tsp Dijon mustard


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place a large skillet over medium heat, add chopped bacon, and cook until mostly rendered and beginning to crisp, 5–8 minutes.
  3. Transfer most of the bacon to a bowl, leaving the rendered fat in the pan.
  4. Add diced onions and bell peppers to the hot bacon fat and sauté until softened, about 4–5 minutes.
  5. Reduce heat to low and stir in the brown sugar until it dissolves.
  6. Pour in the canned baked beans and fold gently to combine; warm for 1–2 minutes.
  7. Transfer the bean mixture to a baking dish and scatter the cooked bacon evenly over the top.
  8. Bake uncovered for 30–40 minutes, until bubbling and caramelized; broil for 1–2 minutes if desired.
  9. Remove from the oven and let rest for 5 minutes before serving.

Notes

For a vegetarian version, swap bacon for smoked tempeh or use smoked paprika with olive oil.
