Description

Delicious Bacon Ranch Chicken Quesadillas combining crispy tortillas with cheese, savory bacon, and juicy chicken, all rich with ranch flavor.


Ingredients

  • 4 large soft flour tortilla shells
  • 2 chicken breasts (cooked and shredded)
  • 6 slices bacon (cooked and chopped)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 Tbsp ranch dressing (or to taste)
  • 2 tsp ranch seasoning
  • 1 tsp chili powder
  • Pico de gallo (optional, for serving)
  • Sour cream (optional, for serving)
  • Ancho-chile ranch (optional, for serving)


Instructions

  1. Preheat your oven to 400°F (200°C). Place the bacon on a lined baking sheet and bake for about 10 minutes, or until crispy. Remove and chop it into bite-sized pieces.
  2. Cook the chicken. Grill, boil, or bake the chicken breast ensuring it reaches an internal temperature of 165°F. Once cooked, shred the chicken with two forks.
  3. Gather all other ingredients to prepare for assembly.
  4. Heat a large skillet over medium heat. Brush the bottom of the pan with a little oil. Place a tortilla in the skillet.
  5. Layer the tortilla with shredded mozzarella, cheddar, chopped bacon, shredded chicken, ranch dressing, ranch seasoning, and chili powder. Add another tortilla on top.
  6. Cook until the bottom tortilla is golden and crispy. Carefully flip it, adding more oil to the skillet if needed. Cook until both sides are crispy and golden.
  7. Remove the quesadilla from the skillet and let it rest for a few minutes. Slice into wedges using a pizza cutter.
  8. Serve warm with pico de gallo, sour cream, and ancho-chile ranch, if desired.

Notes

These quesadillas can be customized with shredded beef or black beans for a vegetarian option.
