Ingredients
- 8 oz pasta (like rotini or penne)
- 4 slices of bacon
- 1 cup cherry tomatoes, halved
- 1 cup lettuce, chopped
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Begin by cooking the pasta according to the package instructions. Once done, drain it and let it cool.
- In a skillet over medium heat, cook the bacon until it’s crispy. Remove it from the skillet and chop it into bite-sized pieces.
- In a large bowl, combine the cooled pasta, crispy bacon, halved cherry tomatoes, and chopped lettuce.
- For the dressing, whisk together mayonnaise, lemon juice, salt, and pepper in a separate small bowl.
- Pour the dressing over the pasta mixture, and toss everything together until well-coated.
- Chill the salad in the refrigerator for about 15 minutes before serving to let the flavors meld together nicely.
Notes
