Description

A refreshing and flavorful salad that combines crispy bacon, juicy tomatoes, and fresh lettuce with pasta, perfect for summer barbecues or quick weeknight dinners.


Ingredients

  • 8 oz pasta (like rotini or penne)
  • 4 slices of bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup lettuce, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Begin by cooking the pasta according to the package instructions. Once done, drain it and let it cool.
  2. In a skillet over medium heat, cook the bacon until it’s crispy. Remove it from the skillet and chop it into bite-sized pieces.
  3. In a large bowl, combine the cooled pasta, crispy bacon, halved cherry tomatoes, and chopped lettuce.
  4. For the dressing, whisk together mayonnaise, lemon juice, salt, and pepper in a separate small bowl.
  5. Pour the dressing over the pasta mixture, and toss everything together until well-coated.
  6. Chill the salad in the refrigerator for about 15 minutes before serving to let the flavors meld together nicely.
