Ingredients

  • 8 large eggs
  • Salt and pepper, to taste
  • 4 flour tortillas (10-inch)
  • 1 cup shredded cheddar cheese
  • 8 slices cooked bacon


Instructions

  1. Heat the skillet over medium-high heat and lightly coat with cooking spray or melt butter.
  2. Scramble the eggs with salt and pepper, cooking until just set but still slightly glossy, about 5 minutes.
  3. Set up your assembly line with warm tortillas on a clean surface.
  4. Fill each tortilla with 1/4 of the scrambled eggs, 1/4 cup shredded cheddar, and 2 slices of bacon.
  5. Roll the tortillas tightly, securing the filling.
