Juicy turkey burgers with grated apple and peppery arugula, topped with sweet caramelized onions, making for a delightful weeknight meal.
Ingredients
- 1 lb Ground turkey (preferably 93% lean)
- 2 cups Arugula (baby arugula recommended)
- 1 Apple (grated, sweet-tart variety such as Honeycrisp or Granny Smith)
- 1 Onion (sliced, yellow onions work best)
- 2 tbsp Olive oil (or butter for richer onions)
- 1 tsp Salt
- 1/2 tsp Pepper
- 4 Burger buns (brioche, potato rolls, or whole wheat)
Instructions
- Caramelize the onions: Heat olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt. Cook, stirring often, until soft and deeply golden—about 15–25 minutes.
- Make the burger mixture: In a bowl, combine ground turkey, grated apple, salt, and pepper. Mix gently just until combined.
- Form patties: Shape into evenly sized patties and press a small dimple in the center of each patty with your thumb.
- Cook the burgers: Grill or pan-fry over medium to medium-high heat until cooked through, reaching an internal temperature of 165°F (74°C).
- Assemble: Place each patty on a bun, top with arugula, and finish with a heap of caramelized onions. Serve immediately.
Notes
Grate the apple on the large holes of a box grater for better texture. Don’t press the burgers while cooking to keep them juicy.
