Description

A vibrant and refreshing salad that combines crisp broccoli and cauliflower with the sweetness of apples, perfect for any gathering.

Ingredients

  • 45 cups broccoli florets, chopped into bite-size pieces
  • 2 ½3 cups cauliflower florets, chopped into bite-size pieces
  • 1 medium apple, diced
  • ½ small red onion, diced
  • 2 celery ribs, diced
  • 23 green onions, thinly sliced
  • ½ cup dried cranberries
  • ½ cup feta cheese, crumbled
  • ½ cup lightly salted roasted almonds, roughly chopped
  • ¾ cup mayo
  • ¼ cup olive oil or avocado oil
  • 3 tablespoons lemon juice
  • 2 teaspoons honey
  • 1 teaspoon garlic powder
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper

Instructions

  1. Make the dressing: In a small bowl, whisk together the mayo, olive oil, lemon juice, honey, garlic powder, salt, and pepper until creamy and well combined. Set aside.
  2. Toss the salad: In a large mixing bowl, combine broccoli, cauliflower, apple, red onion, celery, green onion, dried cranberries, feta cheese, and almonds.
  3. Combine: Drizzle the dressing over the salad ingredients. Toss gently until everything is evenly coated.
  4. Chill: For the best flavor, let the salad chill in the fridge for about 30 minutes.

Notes

Store any leftovers in an airtight container in the fridge for up to 4 days. Do not dress the salad until ready to serve to keep it fresh.
