Description

A refreshing salad that combines crisp vegetables with tart apples and a zesty lemon dressing, perfect for any occasion.


Ingredients

  • 4-5 cups broccoli florets
  • -3 cups cauliflower florets
  • 1 medium apple, diced
  • ½ small red onion, diced
  • 2 celery ribs, diced
  • 2-3 green onions, thinly sliced
  • ½ cup dried cranberries
  • ½ cup crumbled feta cheese
  • ½ cup chopped roasted almonds
  • ¾ cup mayonnaise
  • ¼ cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons honey
  • 1 teaspoon garlic powder
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper


Instructions

  1. Rinse all fresh vegetables thoroughly.
  2. Chop broccoli and cauliflower into uniform, bite-sized pieces.
  3. Dice the apple (skin on) into small pieces.
  4. Finely mince the red onion, slice the celery thinly, and chop the green onions.
  5. In a medium bowl, whisk together mayonnaise and olive oil until smooth.
  6. Gradually add lemon juice while whisking to maintain a silky texture.
  7. Stir in honey, garlic powder, salt, and pepper until well combined.
  8. In a large mixing bowl, combine all the prepared vegetables along with dried cranberries, crumbled feta cheese, and roasted almonds.
  9. Toss gently to distribute ingredients evenly.
  10. Pour the lemon dressing over the salad mixture and toss until every piece is well-coated.
  11. Serve immediately, or chill for at least 30 minutes for optimal flavor.

Notes

For extra crunch, add sunflower seeds or pumpkin seeds. If short on time, use pre-chopped veggies.
