Ingredients
- 2 cups arugula
- 1 medium apple, sliced (a crisp variety like Granny Smith or Honeycrisp works well)
- 1/2 cup pecans
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Toast the pecans in a skillet over medium heat for 3-5 minutes until fragrant.
- Remove from heat and drizzle with maple syrup, stirring to coat the pecans thoroughly. Allow to cool.
- Combine arugula and sliced apples in a large mixing bowl.
- Whisk together olive oil, apple cider vinegar, salt, and pepper in a small bowl to create your dressing.
- Drizzle the dressing over the salad and toss gently to combine.
- Top the salad with the cooled maple pecans and serve immediately.
