Ingredients

  • 2 cups arugula
  • 1 medium apple, sliced (a crisp variety like Granny Smith or Honeycrisp works well)
  • 1/2 cup pecans
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste


Instructions

  1. Toast the pecans in a skillet over medium heat for 3-5 minutes until fragrant.
  2. Remove from heat and drizzle with maple syrup, stirring to coat the pecans thoroughly. Allow to cool.
  3. Combine arugula and sliced apples in a large mixing bowl.
