Description

A delicious and hearty vegetable lasagna layered with fresh vegetables and ricotta cheese, baked to perfection.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups spinach
  • 2 cups ricotta cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a skillet over medium heat, add onion and garlic, and sauté until fragrant.
  4. Add the zucchini, bell pepper, and spinach; cook until softened.
  5. Mix ricotta cheese, oregano, salt, and pepper in a bowl.
  6. Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
  7. Layer 3 lasagna noodles over the sauce, then spread half of the ricotta mixture over the noodles.
  8. Add half of the sautéed vegetables and one-third of the mozzarella cheese.
  9. Repeat the layers and top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
  10. Bake for 30-35 minutes until bubbly and golden brown.
  11. Let it cool for 10 minutes before serving.

Notes

For extra flavor, add your favorite herbs to the vegetable mixture.
