Ingredients
- 1 head of lettuce, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, canned or frozen and thawed
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 packet taco seasoning
- 1 avocado, diced
- 1 cup cooked chicken (optional)
- Tortilla chips (for serving)
Instructions
- Start by layering the chopped lettuce in the bottom of a large serving bowl.
- Next, add the black beans over the lettuce.
- Follow with the corn, ensuring an even spread.
- Gently place the cherry tomatoes on top of the corn layer.
- Sprinkle the shredded cheddar cheese over the tomatoes.
- In a separate bowl, combine sour cream with taco seasoning, then spread this mixture over the cheese layer.
- Add the diced avocado on top for a creamy finish.
- If using, add the cooked chicken as the final layer.
- Serve the salad with tortilla chips on the side for dunking. Enjoy!
Notes
