A quick and flavorful chicken stir-fry packed with vibrant vegetables, perfect for a weeknight meal.
Ingredients
- 1 lb (450 g) chicken breast, thinly sliced
- 2 cups mixed vegetables (bell peppers, broccoli, and snap peas)
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- 1 teaspoon grated ginger
- Cooked rice or noodles for serving
Instructions
- Heat olive oil in a large pan or wok over medium-high heat.
- Add sliced chicken and sauté until it’s cooked through and golden brown, about 5-7 minutes.
- Stir in garlic and ginger, cooking for an additional minute until fragrant.
- Toss in your mixed vegetables and cook until just tender, about 3-4 minutes.
- Pour in the soy sauce and stir everything together, cooking for another minute.
- Serve hot over rice or noodles.
Notes
Consider adding red pepper flakes for heat or fresh herbs for an aromatic touch. Store leftovers in an airtight container for up to three days.
