Description

A quick and flavorful dish featuring spiced shrimp and fresh mango salsa, perfect for busy weeknights and gatherings.


Ingredients

  • 1 lb large shrimp (peeled, deveined, and tails removed)
  • 1 tbsp chili powder
  • 3/4 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne (adjust for desired heat)
  • 3/4 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 tbsp olive oil
  • 2 mangoes (small diced)
  • 1/4 cup red onion, small diced
  • 1 Jalapeño, diced
  • 1/3 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • 6-8 tortillas


Instructions

  1. Marinate and prep the shrimp: Start by ensuring your shrimp is thawed and patted dry. In a bowl, toss them with 2 tablespoons of olive oil along with the chili powder, cumin, garlic powder, cayenne, oregano, salt, and pepper. Stir until thoroughly coated. Set the shrimp aside to marinate while you make the salsa.
  2. Make the mango salsa: Dice the mangoes, jalapeño, and red onion. Combine them in a bowl and add the juice of one lime. Season with salt and pepper to taste and mix well. Set it aside for the flavors to meld.
  3. Cook the shrimp: Heat a skillet over medium-high heat and add the remaining tablespoon of olive oil, letting it get glistening. Place the shrimp in a single layer in the skillet, cooking for about 3 minutes per side. The shrimp will turn opaque and curl up as they cook. Once done, transfer them to a plate.
  4. Assemble the tacos: Warm your tortillas. Spoon the cooked shrimp into the tortillas, top with the fresh mango salsa, and feel free to add any additional toppings you enjoy. These tacos are best enjoyed immediately!

Notes

For added flavor, consider squeezing fresh lime juice over the shrimp after cooking. Leftovers can be stored separately in airtight containers.
