Description

A quick and nutritious one-pan meal combining protein-packed quinoa and savory ground beef with fresh veggies.


Ingredients

  • 1 cup quinoa
  • 1 pound ground beef
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped parsley for garnish


Instructions

  1. Rinse the quinoa under cold water.
  2. Combine the quinoa with 2 cups of water in a saucepan. Bring to a boil, cover, and reduce to a simmer for about 15 minutes, or until the water is absorbed.
  3. Heat olive oil in a skillet over medium heat.
  4. Add the chopped onion and minced garlic; sauté until fragrant.
  5. Add the ground beef to the skillet, breaking it apart as it cooks. Season with cumin, salt, and pepper. Cook until browned and no longer pink.
  6. Stir in the diced tomatoes and the cooked quinoa. Mix until everything is well combined and heated through.
  7. Serve the mixture hot, garnished with chopped parsley.

Notes

For a spicier kick, swap cumin for chili powder. This dish can also be made with turkey or plant-based meat.
