Ingredients
- 2 cups elbow macaroni
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 cup diced celery
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Cook the macaroni: Prepare elbow macaroni according to package instructions. Drain and let it cool completely.
- Combine creamy ingredients: In a large mixing bowl, blend mayonnaise, sour cream, Dijon mustard, and apple cider vinegar until smooth.
- Add veggies and macaroni: Toss in the cooled macaroni along with diced celery, red onion, bell pepper, and sweet pickle relish.
- Season it: Sprinkle in salt and pepper to taste. Mix well until everything is evenly coated.
- Chill it: Cover and refrigerate for at least 1 hour to let the flavors meld beautifully.
- Garnish: Just before serving, sprinkle the top with chopped fresh parsley for a pop of color.
Notes
For a twist, try adding diced jalapeños for spice or Greek yogurt as a substitute for sour cream.
