Description

A simple yet delicious meatloaf topped with a sweet-tangy glaze, perfect for weeknight dinners.


Ingredients

  • pounds ground beef (80/20 blend)
  • 1 large egg
  • 1 onion, chopped
  • 1 cup milk
  • 1 cup dried bread crumbs (plain or Italian)
  • Salt and pepper to taste
  • ⅓ cup ketchup (for glaze)
  • 2 tablespoons brown sugar (for glaze)
  • 2 tablespoons prepared mustard (yellow or Dijon)


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
  2. In a large bowl, combine the ground beef, chopped onion, milk, bread crumbs, and egg. Season with salt and pepper, and mix until just combined.
  3. Press the meat mixture evenly into the prepared loaf pan, smoothing the top.
  4. In a small bowl, mix together the ketchup, brown sugar, and mustard. Spread over the top of the meatloaf.
  5. Bake for about 1 hour, or until no longer pink in the center and the internal temperature reaches at least 160°F.
  6. Let rest for 5-10 minutes before slicing and serving.

Notes

Consider using sautéed onions for added sweetness and adding Worcestershire sauce for umami flavor. Leftover meatloaf is great in sandwiches!
